Homemade bbq bun recipe
I filmed my wife making BBQ pork bun (cha siu bro) for me, hopefully is delicious and educational.

1.5 pounds of skinless pork belly
cut them into thin slices

Meat Marinate
3 tbs of sugar
3 tbs ketchup
3 tbs hoisin sauce
1 tbs white pepper
1 tbs salt
1 tsp five spice powder
Bake 20 mins at 450F on one side, then flip over to bake for another 10 minutes. Your goal is to get the meat to turn slightly charred
set it to cool and then chop into small chunks

500 g of bao flour (medium gluten) from asian market
1/4 cup of sugar
1/2 tsp salt
2 tsp yeast mixed with 1 1/4 cup luke warm water
3 tbs vegetable oil
2 tsp baking powder

Pork bun filling
1 white onion, diced
3 stalks scallions, chopped
shao xing wine, 2 tbs
3 tsp sesame oil
3tbs hoisin sauce
3 tbs ketchup
half cup water with 2 tsp cornstarch mixed in

Buns Filling
Pour small amount of oil into pan and sautéed onion until fragrant.
Add meat chunks prepared earlier, hoisin sauce and ketchup, shao xing wine and sesame oil and stir fry it.
Add water with cornstarch to give the stir fry some sauce
Add in scallion in the final step

Set wrapped bun aside for cooling for roughly 45 mins

Finally, wrap the buns with pork fillings, and steam it for 10 minutes
